    The automated script also references multimux and ffmpeg both of which I cannot find for Windows therefore the script will not work as I do not have those programs installed.

    y tried nero vision, that has a option for 5.1 when encoding avi into dvd, but it wont be true 5.1

    I think there is no automated Process for this u must make u r own effort to make it worth. 

    Adobe Audition 2.0 & SurCode DVD pro. 

    First u must extract the audio from the avi file and encode it to 5.1 then u must redubbed with the avi files..bt this is a tedious process.
